The learner must be able to service kitchen areas and equipment, understanding the importance of hygiene and cleanliness to maintain guest satisfaction.

1. Explain why separate cleaning equipment should be used for floors and work surfaces.

2. Explain why it is important to turn off all electrical equipment before cleaning.

3. Explain why it is important to report faulty equipment / damaged items promptly.

4. Explain why waste must be handled and disposed of correctly.

5. Clean the sink and check that the drain is free flowing.

6. Clean kitchen surfaces, floors, walls and storage areas and check that they are free from debris and removable marks.

7. Switch off electrical kitchen equipment before and during cleaning and dismantle where appropriate and reassemble correctly after cleaning. (Range of Kitchen equipment: fridges, appliances, stoves, microwave ovens)

8. Clean crockery, cutlery and glassware, check that they are free from removable marks and store correctly.

9. Clean food and drink preparation equipment and utensils and store ready for customer use.

10. Replenish complimentary customer supplies and arrange in accordance with organisational requirements. (Range of complimentary supplies: cleaning materials, tea/coffee/creamer, condiments, chilled water/ice)

11. Dispose of waste and debris correctly and clean waste bins ready for customer use.

UNIT STANDARD ACCREDITATION AND MODERATION OPTIONS 
1. Anyone assessing a learner against this unit standard must be registered as an assessor with the relevant ETQA.

2. Any institution offering learning that will enable achievement of this unit standard must be registered with the FE/HE Registrar.

3. Any institution wishing to receive skill development grants must be accredited with the relevant ETQA. Such an institution will also be registered with the relevant SETA.

4. Moderation of assessment will be done by the relevant ETQA at its discretion.

Many of the outcomes have been written in such a way that competence must be demonstrated in the context as opposed to in isolation from a context.

The specific outcomes are comparable to outcomes used internationally.

We therefore structured outcomes using the format noun + verb + condition (modifying phrase)Specific outcomes have been split into three categoriesa) knowledge and understanding (what the learner must know and understand)b) decision-making and acting (what the learner must do)c) adapting performance ( including reflexive competence)In many instances there are more than six specific outcomes, as the inclusion of critical cross-field outcomes and embedded knowledge has increased the number of specific outcomes.
