This unit standard replaces unit standard 9117, "Evaluate the quality of milk in terms of its protein stability, as indicated by the alisarol test", Level 2, 3 credits.
Supplementary Information: Industry specific requirements: > Raw milk intended for processing as UHT milk must be stable when tested with 75% (or higher concentration) alcohol. > When alisarine is added as indicator to the alcohol for the alizarol test and the results are a light purple colour with no flocculation, the milk can be accepted.
